Hillwood whisky is a hidden gem from the Tamar Valley Distillery, located in Hillwood Tasmania on the banks of the Tamar River where Paul Herron, Master Distiller and his triplet sons, ply their trade, combining their skills to produce a whisky abundant in flavour and heart.It’s a contemporary Australian whisky, made in the tradition of Scottish single malt, but given a distinctive edge from the wild Tasmanian landscape and their artisanal family approach. It’s a haven of privacy and seclusion where you can hear the wind in the trees and simply forget about the rest of the world. The Distillery’s limited-edition release bottles comprise of only Single Casks that produce approximately 34 bottles each. From grain to glass, their releases are 100% made by hand. In fact, they’re one of a few select distilleries who create everything from scratch, each step of the way. They mill onsite, create the mash, ferment, distil, mature and bottle all their whisky at the Hillwood property.
